LEAVE THE INDUSTRY STRONGER

Core Values That Guide Everything

The Foundation

My mission is simple: Leave the hospitality industry stronger and better than I found it.

Not through individual success. Through systemic improvement.

That mission is built on four core values:

INTEGRITY FIRST

Do what you say you'll do. Hold yourself to the same standards you set for others. No shortcuts. No exemptions. Trust is earned through consistency.

TEACHING THE NEXT GENERATION

The industry improves when knowledge flows freely. Mentor young professionals. Share what you've learned. Invest in people who will carry the craft forward.

SPIRITS ARE MEANT TO BE SHARED

Quality shouldn't mean gatekeeping. Whether it's a bottle behind the bar or knowledge about how to use it, the point is connection, not collection. Make memories, not dust collectors.

SYSTEMIC IMPROVEMENT OVER INDIVIDUAL ACHIEVEMENT

One successful restaurant doesn't change an industry. Replicable frameworks, documented standards, and shared best practices do. Build systems that scale beyond yourself.

VALUES IN ACTION

These aren’t abstract principles. They show up in everything I do.

At Backyard on Broadway:

Standards based systems that save $35,000 annually while creating fair workplaces. 25 jobs sustained through operational excellence. 52% staff retention rate, more than double the industry average. Proof that integrity and profitability reinforce each other.

Through DIBS Mixers:

High quality cocktail syrups at accessible prices, with free consulting for wholesale clients. 3 jobs created. Democratizing quality, one bottle at a time.

Through Overtime Bar:

Overtime is open and already making the point. A neighborhood bar built on accessible pricing, real hospitality, and a team that gets trained properly from day one. Proving the model works beyond one restaurant and one concept.

On industry boards (AAHA, Visit San Antonio):

Advocating for fair labor practices, operational excellence, and raising standards across the hospitality sector.

In the community:

Distributed 300 complete meal packages to SNAP affected families, including large handcrafted pizzas, family sized salads, cookies, and lemonade, all made from scratch on site. Led the Campari Day of Service with 45 volunteers, second largest nationally. Cooked for Ronald McDonald House families. "When families in our community are struggling to put food on the table, we can't just stand by. We call ourselves a family friendly restaurant, and that has to mean something." - News4SA Coverage

Through spirit education:

8 professional certifications in American Single Malt, Gin, Irish Whiskey, Canadian Whisky, Tequila, and Bourbon (Executive Steward, Diploma Single Malt). Making expertise accessible, not exclusive.

WHY THIS MATTERS

One great restaurant doesn't change an industry.

One innovative product doesn't shift gatekeeping culture.

One person with expertise doesn't improve systemic knowledge gaps.

But replicable frameworks, documented standards, accessible education, and commitment to teaching the next generation? That changes everything.

Integrity first. Share what works. Teach freely. Build systems that outlast you.

That's how you leave the industry stronger than you found it.
